Winemaker Rafael Tirado
Our winemaker Rafael Tirado has dedicated his entire professional life to winemaking. From the beginning, he has participated and worked in many wineries in Chile and abroad, which has helped him obtain a very broad and diverse wine education.
"My life has always been linked to Lake Colbún and it has been a very important part of my work and family, a place that has been the cradle of learning about wine, sailing, fishing, hiking in the Andes Mountains and enjoying the incredible nature of the area."

1st Course
Chilean Shrimp Ceviche

Wine-Laberinto Cenizas Sauvignon Blanc, Maule Valley

“This hand harvested, single vineyard, 100% estate Sauvignon Blanc is from vines that Rafael Tirado planted himself in 1993. This SB has a bright nose with Guava, passion fruit, and lemon leading to a mineral mid palate and soft undertones of crushed rock. The volcanic ash from the vineyard adds to this minerality and sustained finish. The Sauvignon Blanc is fermented in 100% stainless steel which leads to a very juicy and refreshing wine.” 95 ptsC

2nd Course
Chicken Cazuela
(Chilean Chicken Stew)

Wine-Laberinto Arcillas Pias, Maule Valley

“From the Maule Valley, Laberinto Arcillas 2020 País is a bright, medium-bodied unfiltered Pais wine produced from vines grown around Lake Colbún. Grapes are fermented 50% whole bunches and aged in concrete, 100-year-old amphoras and previous use oak barrels. Look for ripe red berry, sous bois, dried sweet tobacco leaf, earthy spices, citrus zest and minerally flavours. Good now, better in 2023.”

Wine-Laberinto Cenizas Mezcla Tinta, Maule Valley

“This hand harvested, single vineyard, is a blend of 65% Merlot, 25% Cabernet Franc, and 10% Cabernet Sauvignon that Rafael Tirado planted himself in 1993. The palate is full-bodied with lavish ripe black cherries, blackberries, blueberry and cassis fruit that coat the mouth. Hints of eucalyptus and violets lead to a structured yet smooth finish with subtle hints of oak; succulent fruit with good grip.”
