Fire Salt & Spices Wine Dinner with Chef Shannon Smith

There is something ancient and mesmerizing about cooking over open fire, the crackle of wood, the scent of smoke in the air, and the way simple ingredients transform with heat, salt, and spices.

For this special outdoor dinner, guests will be seated in my outdoor kitchen and around the pool while I cook the meal over live fire. The evening is inspired by the work of legendary Argentine chef Francis Mallmann, who has become famous around the world for his dramatic open-fire cooking and his philosophy that fire, salt, and patience are all a great cook truly needs.

Inspired Chef Mallman, this dinner celebrates the bold flavors of fire cooking.

The evening’s menu will include empanadas cooked in a wood-fired oven, a bright quinoa salad, and a mixed grill of meats and locally made sausage cooked over open flame. We’ll finish the night with smoked apple crisp served warm with ice cream.

It will be a relaxed evening filled with firelight, great food, and the kind of communal table that reminds us why cooking outdoors is one of the oldest and most joyful ways to gather.

We had the pleasure of getting to attend one of their cheese & wine pairings at their iconic Bleecker St. store as well as getting to tour their cheese caves on Long Island. It was such an incredible experience that we are excited to get to share with you!

This menu will consist of cheeses we enjoyed at the tasting, what we got to see in the caves, & our all-time favorite cheeses from Murray's plus other accoutrements like charcuterie, fresh fruit, & more. Wines will be spring-inspired, easy drinkers so the cheese can really be the star of the show!

Idlewild Winery Dinner at Biga

Idlewild has a relatively concise aim within a broad context: to produce wines of exceptional balance and beauty. It is a journey to pursue Italy’s Piedmont in the elevated hills of Mendocino and Sonoma Counties, and to find the sides of these varieties that are intriguing, delicious, and haunting. Each wine is unique and treated as such, though the common thread is balancing depth and seriousness with vibrancy and joy. Emphasis is on the vineyard followed by minimalist winemaking techniques. While not dogmatic in practice, an honest and sustainable approach is fundamental in making wines of purity.

“The 2024 shows depth of flavor while retaining a very moderate weight and a lithe finish. The Flora & Fauna White is a balance of florals (ornage blossoms), minerals (wet stones), citrus (lemon peel), and orchard fruit (pear). Just when the wine starts to feel intense in its phenolics and aromatics, the palate turns to this near rain water like lightness with a crisp and clean finish.”

“It shows all the bright and fresh sides of rosé we love with a pronounced structure to pair with food. There is a play between savory versus fresh and subtlety versus power that make this wine intriguing. The aromas are wound up around orange peel, grapefruit, alpine herbs, peach, wildflowers, and sea spray. The four varieties can all be seen in the structure: Nebbiolo and Grignolino lend the crunchy minerality, Dolcetto lends a delicate softness, and Barbera lends bright acidity.”

“In Italy, the house wine is often light, fresh, and firmly structured so as to pair beautifully next to a wide range of foods, and that is the inspiration for this blend. The 2023 is both deep and savory while also being light and fresh. Dark cherry, iron and sanguine notes, warm spices, dried herbs, violets, and graphite are highlights of the aromas. The mouth feel is a joyful interplay of brightness with chewy bass notes before the seriousness kicks in with a firm acid and tannin balance on the finish.”

Join us for a Spring inspired workshop with our friends at Charcuteray - and learn how to design your own petite inspired floral arrangement using 100% locally grown flowers, and our friends at Charcuteray will lead us in an interactive wine & cheese tasting!

Shiraya & Savannah from Charcuteray will walk participants through 4 wines + 8 cheese and charcuterie pairings plus other accouterments. Learn more about wine pairing, and discover a new favorite cheese!
The menu will be inspired by warm spring days, fresh blooms, and seasonal produce.

The ladies from Anthousai will then demonstrate how to create a sweet, petite floral arrangement using 100% locally grown and seasonal flowers in their signature style! We will then guide you in creating your own floral arrangement. You will leave with the skills and knowledge on how to create your own arrangements in the future.
