Nostalgia Wine Dinner - The Brasserie at Juniper
After exploring Italian food and enjoying the success of opening his first restaurant, it was time for Justin to take a shot at French cuisine. Opened in 2006, The Brasserie quickly became one of Tulsa’s best fine dining restaurants and it was here that Justin earned his first of many recognitions as Oklahoma Magazine’s Best Chef in Tulsa. Classic French dishes like escargot, steak au poivre, and crepes were the highlights of this classic refined restaurant. While short lived, Freya was one of Justin’s favorite restaurants to open. It’s clean, bright, Scandinavian style and fresh delicious cuisine awarded Freya the honor of best new restaurant by the Tulsa World in 2022. In a small dining room in Brookside, people enjoyed fermented, pickled, preserved, and perfectly prepared foods not yet seen before in Tulsa. This menu is perfect for late summer and a fitting crown jewel to the Nostalgia Wine Dinner Series.

Nostalgia Wine Dinner - Tavolo at Juniper
After successfully opening Juniper and Prhyme Steakhouse in 2011 and 2012, Justin revisited his Italian roots by opening Tavolo in the historic Philtower in downtown Tulsa. Tavolo’s menu featured handmade pastas and more refined cooking techniques than his first foray into Italian cuisine. It was here that Justin featured the dish that started it all for him as a chef, Chicken Marsala. At 14 years old Justin’s first attempt at making dinner for him and his father was Chicken Marsala, and patrons of Tavolo loved every bite. This year we're featuring more Tavolo favorites including uovo fritto and halibut picatta! Join us for a glimpse back at the food that filled the Philtower for nearly 7 years.

Domaine du Salvard Wine Dinner at Biga
Domaine du Salvard has been a working domaine since 1898, through five hardworking generations of the Delaille family. Today, all forty-two hectares of vineyards are farmed by the capable brother team of Emmanuel and Thierry Delaille, with help from their father Gilbert. To our delight, they have carried on the traditions established by their ancestors, producing a true, classic Cheverny that is both simple and elegant. The Delaille brothers have focused their attention on growing fresh, lively Sauvignon Blanc, deeply rooted in the sand, clay, and limestone plains of northeastern Touraine. Pinot Noir, Gamay, and Cot constitute their red grape holdings, creating youthful reds with great aromatics.

Jonata & The Hilt Estate Wine Dinner at PRHYME
Jonata went against convention and planted a wide range of varieties rarely grown side by side. This audacious project caused quite a stir in the wine growing community but was quickly vindicated by the exceptional quality of the wines it produced.
The Hilt’s favorite vineyards are in the northern-facing, closest to the ocean, and most windswept quadrant. These sites are the worst place for a grape grower, but the best ones for a winemaker.
