Belle Glos Wine Dinner at Biga

Owner/winemaker, Joe Wagner chose the name Belle Glos (pronounced “BELL GLOSS”) to honor his grandmother, Lorna Belle Glos Wagner. Lorna co-founded Caymus Vineyards in 1972 alongside Charlie Sr., and Chuck, Joe’s grandfather and father, respectively. She was an inspirational figure to Joe and an avid lover of Pinot Noir.
While each vineyard location lies near the Pacific Ocean, the climate differences are significant, varying with the amount of fog, wind, sunlight, and soil type at each site. Each Vineyard farmed and crafted to distill the purest essence of the locale into elegant expressions of California Pinot Noir.

We're teaming up with Annie Shull, co-owner of Raptor Ridge Winery in Willamette Valley, Oregon, to bring this special dinner designed to introduce you to their amazing selection of wines. Dinner is 5-courses prepared using ingredients from local farms, each one paired with a different Raptor Ridge wine. Annie will be present to talk with guests throughout the evening and shares stories of their approach to winemaking.

For this dinner, we will are able to accommodate only vegetarian, gluten-free, and nut-free dietary requests. Guests will be seated in a semi-communal style in groups of 6 to 8.

Barnett Vineyards Wine Dinner at Polo Grill

David has served as Winemaker and General Manager at Barnett Vineyards for fourteen complete vintages, beginning in 2007. His global winemaking journey has taken him to Barossa Valley; Provence; and Canterbury, along with travels to virtually every fine wine region in the world.

A graduate of Brock University, where he earned an Honors Degree in Enology and Viticulture in 2002, David refined his craft as Assistant Winemaker at Ridge Vineyards, spending five years atop Montebello in the Santa Cruz Mountains.

When he's not immersed in all things wine, David enjoys spending time with his son Nolan and tinkering with his vintage VW bus. And if you ask his favorite wine? It's always the one in his glass.

For this special outdoor dinner, guests will be seated in my outdoor kitchen and around the pool while I cook the meal over live fire. The evening is inspired by the work of legendary Argentine chef Francis Mallmann, who has become famous around the world for his dramatic open-fire cooking and his philosophy that fire, salt, and patience are all a great cook truly needs.

Inspired Chef Mallman, this dinner celebrates the bold flavors of fire cooking.

The evening’s menu will include empanadas cooked in a wood-fired oven, a bright quinoa salad, and a mixed grill of meats and locally made sausage cooked over open flame. We’ll finish the night with smoked apple crisp served warm with ice cream.

It will be a relaxed evening filled with firelight, great food, and the kind of communal table that reminds us why cooking outdoors is one of the oldest and most joyful ways to gather.

Dancing Crow Vineyards is a small, family-owned and operated winery with a shared Californian winemaking legacy that spans four generations going back to the late 1800’s. We specialize in sustainably grown, French-style wines, utilizing vineyards from Lake and Mendocino Counties. These less well-known AVAs contain a remarkable combination of volcanic soil, high-elevation vineyards, and mountain-grown grapes allows us to make a wine that have an ideal balance between fruit, acidity and tannins.
