A Party Celebrating Buzz Dalesandro
Buzz liked a party, and we think the best way to remember him together is to do so at a place that brought many evenings of joy and camaraderie, Cain’s Ballroom. On Monday March, 16th from 6:00-9:00 we would like to invite everyone to celebrate the life of Buzz Dalesandro.
One of Buzz’s best qualities was the diversity of the friendships he shared. All are invited. All friends of Candy, Olivia and Sonny are absolutely welcome as well. The more support and stories, the better. If you have any nice, fun, or funny pictures of Buzz (and yourself), please upload them to https://photos.app.goo.gl/9AUyFTo9vAZ7KSJS7 or email them to sonny@tulsa-athletic.com. Also, feel free to leave them in the comments and we’ll gather them for his memories collage.
There will be a cash bar, along with music and food. Thank you again to everyone for the continued support and we looking forward to laughing, crying and hugging on the 16th of March.

Argentina Wine Dinner at Biga
A meeting of minds
“El Enemigo is the passion project of two Argentinian friends that has earned a cult following, dreamed up during a twilit sojourn along the River Thames in London in 2009. Alejandro Vigil is a soil expert and celebrated winemaker who for years has headed operations at Bodega Catena Zapata, the estate owned by Adrianna Catena’s father, the legendary Nicolás, a party in honour of whom they were both attending that opportune night. Adrianna is a historian currently studying for her doctorate at Oxford University. El Enemigo – the enemy – was created to produce a wine that would respect history and traditions whilst simultaneously rejecting the status quo.”

Fried Calamari with Cilantro Lime Aioli
Wine-El Enemigo Chardonnay, Mendoza Argentina
“Alejandro Vigil is a master of Chardonnay, as well as a man who likes to push boundaries, which is why this impressive white was made with a little flor, just like a Fino Sherry. Toasty, spicy and salty, this is briny and refreshing with some honeyed notes”
2nd Course
Chicken Empanada
Salsa Criolla
Wine-El Enemigo Cabernet Franc, Mendoza Argentina
“This Cabernet Franc is ruby red in color with soft violet tones. The nose has intense aromas and concentrated notes of cassis, ripe currants, and sweet spices including black pepper and cloves. His tenure provides integrated oak notes of cedar and vanilla”
Entrée
Grilled Pork Tenderloin with Red Chimichurri
Wine- El Enemigo Malbec, Mendoza Argentina
“When you taste it, there’s an energetic lift: blackberries, plums, a whisper of floral violet, and a subtle herbaceous layer. On the palate it’s silky yet structured, supported by refined tannins, then finishes with a savoury, mineral-tinged echo that lingers. It’s a Malbec that balances power and poise — great to sip now but also rewarding with a little bottle age.
Dessert
Maple Flan
$50 per person

Winter Italian Wine Dinner with Chef Shannon Smith
SOLD OUT
I’ve just returned from Italy where I spent the new year shopping for ingredients from the markets in Rome, Florence, and Naples! I’m excited to share them with you in the “comfort food” dishes I’ll prepare for this dinner.
We’ll begin with a tasting of pecorino and parmigiano Reggiano with 50-year-old balsamic and jam. For a warm-up you’ll get a steamy bowl of winter vegetable minestrone and focaccia, followed by risotto made with saffron recently harvested in Tuscany, and tagliatelle with Chianti wine-braised beef. We’ll end with chocolate torte in a Sicilian pistachio crust.
I’ll tell a few tales of my many adventures in the Italian markets and the people who taught me how cook Italian food. I’ll also be serving some special wines from throughout Italy. This is a perfect way to brighten the mid-winter blues and I hope you’ll join me!
The Menu:
Cheese tasting with 50-year balsamic and jam
Winter Minestrone
Mushroom and Saffron Risotto
Tagliatelle with Chianti-braised Beef
Chocolate Torte in Pistachio crust

Italian Wine Dinner at Duet
1st Course
Spicy Shrimp with Creamy Polenta
Wine-Poggio Costa Brut Rose, Veneto
“Poggio Costa Rosé offers a very pale appearance with pink grapefruit and salty minerality. Refreshing crisp white peach, and subtle wild berries and bright fresh raspberries contribute to vibrant red fruit complexity, alongside light pink floral hints of Pinot Nero perfectly union with the Glera grape.”
2nd Course
Lasagna Bolognese
Wine- Antonio Sanguinetti Chianti DOCG, Tuscany
“The intensely earthy, umami nose features aromas of soil, mushrooms, pepper and balsamic, but fruit notes of black cherries and dark berries provide balance while preserving a feeling of depth. The earth and black cherry tones headline the palate, before a bitter, slightly spicy finish.”
