Paysan Wine Dinner at Biga

  • Biga 4329 South Peoria Avenue Tulsa, OK, 74105 United States (map)

“WE DID NOT SET OUT TO MAKE THESE WINES. WE DISCOVERED GREAT VINEYARDS AT THE EDGE OF SENSIBLE FARMING AND DECIDED TO BRING THEM TO LIGHT.
The farther we looked, the more we found – remote, challenging vineyards, with hard depleted soils, and intense sunlight tempered only by the coastal breeze. Vineyards capable of producing only the most idiosyncratic wines. Our goal as winemakers is to lightly polish the roughest edges and leave the idiosyncrasy intact. It is here in the back country, filled with individual character, where Le P’tit Paysan comes to life.”

1st Course
Fried Calamari Tostada with Asian Slaw and Chipotle Aioli

Wine-Paysan Sauvignon Blanc Zabala Vineyard, Arroyo Seco California

“This Sauvignon Blanc is built for those looking for deep complexity without sacrificing the kind of drinkability that most Sauvignon Blanc lovers appreciate. It's mineral, textural, and it combines an array of citrus with white flowers and crispy acidity. Just plain delicious! “

2nd Course
Roast Salmon with Guajillo Sauce
Black Beans and Jalapeno Crema

Wine-Paysan Rose, Central Coast California

“Initial aromas of watermelon and cantaloupe are inescapable, transitioning to trailside strawberry with a touch of air. Melons and strawberries persist on the palate, and bright red fruits continue into the finish transforming into a pleasing strawberry-basil herbaceous salinity.”

• Entrée
Orange and Piloncillo Adobo Pork Roast
Rice with Chiles and Corn

Wine-Le P’tit Paysan Cabernet Sauvignon, San Benito California

“Sourced from the 45-year-old Wheeler Ranch, our old vine Cabernet Sauvignon grows in alluvial deposits over the San Benito Arroyo. Warm days and cool nights typical of the Central coast allow us to pick at high acidity with moderate sugars providing the backbone of a luscious mid-to-full bodied wine with low alcohol. Dark black fruit, purple violet and a touch of dried herbs tantalize the nose and dance on the palate. The unique combination of volcanic soil, warm days and cool nights create this uncommonly structured, ripe, fresh and minerally driven wine.”

Dessert
Coffee Flan with Tequila Whipped Cream
