1st Course

Baked Cod Fillet with Bouillabaisse Sauce and Green Olive Tapenade

Wine-Pacificana Chardonnay California

“Golden straw color. Aromas and flavors of toasty apple custard pie, honey roasted pineapple,

and dark roasted nuts with an bright, fruity medium-to-full body and a delightful, medium-long

finish with notes of spiced praline and creme brulee with fine tannins and light oak flavor. A

delightfully flavorful and attractive well-oaked chardonnay.”


2nd Course

Garganelli with Speck, Peas, and Scallion Cream

Wine-Dime Red Blend Santa Barbara County

“Dime is a perfect ten. A blend of 70% Cabernet Sauvignon and 30% Merlot from two of

the most prime spots in the Santa Ynez Valley, this wine is a wonderful portrayal of

where it comes from and how it was made. Grapes were picked at optimal ripeness for

fruit flavor and texture, and the juice was fermented in stainless steel before 14 months

aging in 40% new french oak. The result is soft tannins and a lush, velvety texture.”

“Chop Shop is a California Cabernet Sauvignon that's ready to be enjoyed any night of

the week. A blend of Lodi and Clarksburg AVAs, this crowd-pleasing style results from

picking perfectly ripe grapes and aging them in French and American oak, 30% of which

is new, lending structure to the final wine. This is a bold, juicy Cabernet Sauvignon, and

what’s in the bottle is a friendly red with a fruit-forward personality that pairs well with

your favorite comfort foods.
