“Spain’s unique geography and situation are responsible for the wide range of climates available throughout the country which give rise to a large number of different grape varieties which can be cultivated there. Vineyards stretch from the green, rolling hills of the north to the arid expanses of the south, and all the differences between them, from weather to the richness of the soil and the water, are what makes Spanish wines so special and unique. The influence of the Cantabric Sea, Atlantic Ocean and Mediterranean Sea play a very important role in the ripening of the fruit, and even the breezes blowing from them contribute to the differences between Spanish wines.”

1st Course Fried Calamari with Romesco Sauce Wine-Mont Marcal Cava Brut Reserva, Catalonia Tasting Notes Colour: Pale yellow, with fine bubbles and a perfect mousse. Bouquet: Aromas of yeast and fruit compote, with a finish of ripe fruit. Palate: Fine presence on the palate, very dry but perfectly balanced, crisp and elegant.

2nd Course Mahi Mahi with Green Gazpacho Sauce Wine-Legado del Conde Albarino, Rías Baixas Tasting Notes “Neat, straw yellow with lemon iridescence. On the nose, medium intensity of pear-style white fruit and hay final notes. On the palate, nice with some Atlantic Ocean salt; jasmine and apple after notes.”

Entrée Grilled Chorizo with Olive Oil Potato Purée Mojo Verde Wine-Losada El Pajaro Rojo Mencia, Bierzo “Rubbery, leathery berry aromas are edged with woody accents. There’s intensity and depth to the palate, which doles out rustic plum and berry flavors. A moderately powerful but ripe finish concludes this likable Mencía from a good year.” 89 pts Wine Enthusiast
