1st Course
Croquetas de Jamón
Wine-Itxas Harri Roxa Rose
“2020 was a strong year for the native garnacha in Navarra, producing wines that are complex with bright aromatics. Navarra was spared the severe fungal diseases that struck other regions, contributing to the harvest being more generous than in 2019. Summer was dry and hot, and they did not see much rain from April to October. Harvest began the week of August 24th under ideal conditions. “
2nd Course
Roast Chicken with Garbanzo Beans, Tomatoes, and Paprika
Wine-Pedro Gonzalez Mittelbrun Castilla e Leon
“Planted at high altitude on the barren plains of Leon (north west Spain) with the Ficos de Europa mountains in the background. This region was once one of the most important in Castilla y Leon for grape growing. Over time vineyards have been uprooted but Leyenda de Paramo is conserving the old vines and replanting in this up and coming region. Deep, acid and poor soils with a clay texture, it is mostly made up of gravel and pebbles.”
Entrée
Spanish Braised Pork with Potatoes and Olives
Wine-Antidoto Cepas Viejas Ribera del Duero
“The 2019 Antídoto fermented with indigenous yeasts and matured in 600-liter French oak barrels, 15% of them new, for ten to 12 months. It's a tight and powerful vintage, ripe and with abundant tannins and without the spark I found in the 2020. After some time in the glass, the wine developed some floral aromas, but the palate remained more austere.”
Dessert
Tarta de Santiago
Spanish Almond Cake
$45 per person
